A Fish on Wood
Collected by Will Wirt from the Wai Wai people of Guyana. For centuries people have been cooking fish on a water-saturated wooden plank held over a fire. The wooden plank imparts a delicate smoked flavor to the fish, and prevents the fish from falling apart since no flipping is required during the slow cooking process.
